Basic Apple Cider Vinegar Recipe

This zero-waste method uses apple peels and cores you'd normally throw away!

  • Apple scraps from 6-8 apples (peels and cores)
  • 4 cups filtered water
  • 1 tbsp raw honey or sugar (optional, helps fermentation)
  • 1 large glass jar


Equipment needed:

  • Large glass jar
  • Coffee filter or paper towel
  • Rubber band
  • Wooden spoon
  • Fine mesh strainer


Instructions:

  1. Save apple peels and cores from your cooking/snacking (organic apples work best)
  2. Place apple scraps in your clean glass jar, filling it about halfway
  3. Dissolve honey or sugar in warm water, then cool to room temperature
  4. Pour the sweetened water over the apple scraps until they're completely covered
  5. Cover the jar with a coffee filter or paper towel and secure with a rubber band
  6. Place the jar in a warm, dark spot (like a cupboard) for 2-3 weeks
  7. Stir daily with a wooden spoon to prevent mold
  8. After 2-3 weeks, you'll see bubbles and notice a vinegar smell
  9. Strain out the apple scraps and return the liquid to the jar
  10. Cover again and let ferment for another 2-4 weeks until it reaches your desired acidity
  11. Once ready, transfer to a bottle with a lid and store at room temperature


Flavored ACV Variation

  • 1 cup finished apple cider vinegar
  • 2 cloves garlic, crushed
  • 1 tbsp fresh ginger, sliced
  • 1 sprig rosemary
  • 1 tsp peppercorns


Instructions:

  1. Place all ingredients in a clean glass jar
  2. Pour apple cider vinegar over everything
  3. Seal with a lid and shake gently
  4. Let infuse for 2 weeks in a cool, dark place
  5. Strain out the solids and use as a flavorful health tonic or salad dressing
