Basic Bone Broth Recipe
This budget-friendly method uses bones and vegetable scraps you'd normally throw away!
- 1-2 kg (2-4 lbs) bones (chicken, beef, or fish bones)
- 4 cups vegetable scraps (onion skins, carrot ends, celery leaves, herb stems)
- 2 tbsp apple cider vinegar (helps extract minerals from bones)
- 1 bay leaf
- 5-6 peppercorns
- Water to cover everything
- 1 tsp salt (optional, add at the end)
Equipment needed:
- Large pot or slow cooker
- Fine mesh strainer
- Glass jars for storage
- Large bowl
Instructions:
- Save bones from your meals (roast chicken, beef bones, fish heads)
- Collect vegetable scraps in a bag in your freezer until you have enough
- Place bones and vegetable scraps in your pot or slow cooker
- Add apple cider vinegar - this helps draw out minerals and collagen
- Add enough water to cover everything by about 2 inches
- Add bay leaf and peppercorns
- Bring to a boil, then reduce to a simmer
- For stove top: simmer for 12-24 hours (add water as needed)
- For slow cooker: cook on low for 24-48 hours
- Strain through a fine mesh strainer into a large bowl
- Discard solids (they've given up all their nutrients)
- Add salt if desired
- Let cool, then store in glass jars in the refrigerator for up to 5 days or freeze for months
